mmmmm capers!

So, I have this new favorite recipe.....Breaded chicken topped with arugula and blistered tomatoes in a Lemon Caper sauce!!! YUM-O!!

So, of course, recipe (not so detailed) is as follows...

breaded chicken breast (Cooked)
arugula
cherry tomatoes (blistered)
you blister them by tossing them in a HOT non-stick pan with just a tad of olive oil and roll them around til they are "blistered". I usually make sure they have a few blackened spots on them.

Lemon Caper Sauce

heat up a stick of unsalted butter
add a few capers (you decide how many)
add lemon juice (about 1/4 cup)
let them heat up and reduce a bit, then add about 1/4 cup of heavy cream.
Stir until well blended and creamy.

PLATING:

Chicken breast, top with tomatoes and arugula, then top with the sauce. Goes well with steamed wild rice.

It's that time!! Class time!!

So, I got registered for classes, and re assigned twice to different classes due to scheduling conflicts, but am now FINALLY starting school this Wednesday. Unfortunately, the classes are Nutrition, and Management and Supervision. Lecture classes that I will most likely be SOOOO bored in that I won't know how to stay awake. Can we say LOTS OF ESPRESSO!?!?!? Four-hour long classes. UGH, what am I doing?
I'm following a dream! That's what I'm doing! So, wish me well, and say LOTS of much needed prayers for me as I begin this journey and share with you all!

Big Sur, and Nepenthe!

So, I was in California this past week, and on Saturday, My friend and I drove down part of the coast into an area called Big Sur, which is an AMAZING drive! We stopped for lunch at this restaurant with AMAZING views called Nepenthe. We shared a basket of fries and I had a Turkey Avocado and Bacon sandwich with a Green Salad drizzled with a French Vinaigrette. So Yummy! Melinda had a French Dip Sandwich with the same Salad. Why people out this side of the country don't put Avocado on Sandwiches is a mystery to me! I had a glass of Chardonnay with my meal, cuz when you're in Wine Country (I consider California "Wine Country", no matter how close to Napa I may be).....
If you ever do the drive on the CA coast driving the PAC Highway (that's CA Rt 1), Stop at Nepenthe! Wonderful!

So, I went to the Art Institute this past week to get all situated to go to school in October. I'm stressin out, Big Time!! School is gonna cost me an arm and a leg, and I am gonna be SOOOO in debt when I graduate! What to do when you want to follow your dreams amd make it happen, and then you can't really afford it! Ce la vie! Carpe Diem! Gonna do it anyway. Prayers and good wishes welcome all around!

I'll try to post some throughout the week....it's gonna be busy.

Hello fellow foodies and travelers! I decided that since I was going to be starting Culinary School in October (2010), I should start a food blog! This blog will include experiences that I have in school, traveling, cooking, eating....anything having to do with food that I experience.
